Sometimes you want a bowl of beige and this is the perfect Sunday supper if you ask me. Of course you can add some greens if you want, either in the sauce or on the side. I use Farmhouse for a classic cheddary taste but you could easily sub in another of our block cheeses.
Ingredients

225g macaroni (or alternative pasta shape)

60g plant-based butter

30g plain flour
-
500ml unsweetened plant-based milk (I use soy milk)

120g Kinda Co. Farmhouse cheese

Salt to taste

Pepper to taste

50g breadcrumbs

50g Kinda Co. Italian Style cheese

Directions
Cook the macaroni according to the package instructions until al dente. Drain, reserving about 1 cup of pasta water, and set aside.
Preheat the oven to 190°C.
In a large saucepan, melt the plant-based butter over medium heat. Add the flour to the melted butter and whisk continuously to form a roux. Cook for 1-2 minutes until it becomes slightly golden. Slowly pour in the plant-based milk, whisking constantly to avoid lumps. Continue to whisk until the mixture thickens, which should take about 5-7 minutes.
Once the sauce has thickened, reduce the heat to low and stir in the Kinda Co. Farmhouse cheese. Continue stirring until the cheese is completely melted and the sauce is smooth.
Add salt and pepper to the cheese sauce. Adjust the seasonings to taste.
Add the cooked pasta to the cheese sauce, stirring until the pasta is well-coated with the creamy mixture. As needed add some of the reserved pasta water gradually to achieve a runny consistency, you're looking for a fairly runny sauce as it will thicken as it bakes.
Transfer the mac and cheese to a baking dish. If using, sprinkle the breadcrumbs and Kinda Co. Italian style cheese on top.
Bake in the preheated oven for about 20 minutes or until the top is golden and the edges are bubbly.

I use Farmhouse for a classic cheddary taste but you could easily sub in another of our block cheeses - smoked would work perfectly, too!
