This recipe is only thing I want to eat in the heat; it's sweet, salty, and sharp - the perfect thing to make on a sunny day.
Ingredients

1 small watermelon, seedless or seeds removed, cut into bite-sized cubes

Fresh mint leaves, chopped

2 tablespoons extra-virgin olive oil

1 lemon, juiced

Salt and pepper, to taste

Directions
In a large bowl, combine the watermelon cubes and chopped mint leaves.
In a separate small bowl, whisk together the olive oil and lemon juice until well combined. Season with salt and pepper to taste.
Pour the dressing over the watermelon and mint mixture. Gently toss to coat the ingredients evenly.
If you have time, let the salad marinate in the refrigerator for about 15-20 minutes to allow the flavours to meld together.
Before serving, transfer the dressed watermelon and mint mixture to individual serving plates or a large platter.
Crumble over the Greek Style cheese over the top of the salad.
