Ingredients

1 tbsp olive oil

1 red onion, diced

1 large jar or 2 x tins black beans - I used Bold Bean Co
-
1/2 packet fajita seasoning (or make your own using a blend of cumin, smoked paprika, salt, garlic, chilli, and ground coriander)

Juice of a lime
-
Few sprigs coriander, chopped

1 packet Kinda Co. Greek Style

Directions
Heat the oil in a shallow pan over a medium heat and add in the onion. Cook until soft.
Add the beans to the pan along with all the liquid they were stored in. Heat until bubbling.
Cook for a few more minutes until warmed through, then add in the fajita seasoning and lime juice and stir until combined.
To blend your refried beans you can either use a stick blender directly into the pan, transfer the mixture to a food processor or use a potato masher. I like blending until it's really smooth but if you prefer a more chunky texture then stop when it's at your ideal consistency.
To serve: spoon the refried beans into a shallow bowl or dish and crumble over the Greek Style, scatter on the coriander and jalapeños and dig in!
