Refried Beans with Greek Style

Refried beans with Greek Style

Ingredients

    • 1 tbsp olive oil

    • 1 red onion, diced

    • 1 large jar or 2 x tins black beans - I used Bold Bean Co 

    • 1/2 packet fajita seasoning (or make your own using a blend of cumin, smoked paprika, salt, garlic, chilli, and ground coriander)

    • Juice of a lime

    • Few sprigs coriander, chopped

    • 1 packet Kinda Co. Greek Style

    • Tortilla chips to serve

    Directions

    1. Heat the oil in a shallow pan over a medium heat and add in the onion. Cook until soft.  

    2. Add the beans to the pan along with all the liquid they were stored in. Heat until bubbling. 

    3. Cook for a few more minutes until warmed through, then add in the fajita seasoning and lime juice and stir until combined. 

    4. To blend your refried beans you can either use a stick blender directly into the pan, transfer the mixture to a food processor or use a potato masher. I like blending until it's really smooth but if you prefer a more chunky texture then stop when it's at your ideal consistency. 

    5. To serve: spoon the refried beans into a shallow bowl or dish and crumble over the Greek Style, scatter on the coriander and jalapeños and dig in!
