This recipe works great with our Blue cheese but would be equally great with our Garlic + Chive or Summer Truffle cheeses. You can change up the type of leaves too. I like a mix that includes spinach but you could use any green leaves, or a combination of leaves and chopped chicory and fennel.
This makes enough for a side for 2 people, recipe can be easily doubled or tripled to serve more.
Ingredients

1 bag of mixed leaves

½ packet of Blue cheese

2 pears

Small handful walnuts (or pecans), crushed
Dressing:

1 clove garlic, minced

1 tbsp red wine vinegar

1 tbsp lemon juice

3 tbsp olive oil

1 tsp dijon mustard

Big pinch salt

Freshly ground black pepper
Directions
Add all the dressing ingredients to an empty jar or small tub, add a lid and shake well until combined. Set to one side
Scatter the leaves over your chosen serving dish
Cut the cheeks off the pear, slicing each side close to the core to leave you with two round pieces with a flat side. Finely slice and fan out 3-4 slices and place on top of the leaves
Slice the blue cheese into little squares and scatter over the leaves along with the walnuts
Just before serving give the dressing a final mix and pour over the salad to coat all the leaves.
