Ingredients

200g Pasta

½ Block Kinda Co. Sun-dried Tomato Cheese
-
Small Bunch Fresh Basil

50g Olives (optional)

1 tbsp Olive oil
Directions
Put a pan of salted water on the hob to boil. Once boiling add your pasta and cook for 12 minutes (or according to packet instructions.)
While the pasta is cooking slice the olives into circles and roughly shred the basil leaves.
Drain your pasta reserving about 100ml of the pasta water.
Add your Sun-dried tomato cheese to a pan along with 75ml of the pasta water, place over a medium heat and stir until the cheese has melted into the water to create a creamy sauce. If the sauce is too think keep cooking until it has thickened. If it’s too thick add a little more water.
To the sauce add the olives, half the basil and the cooked pasta, stirring well until everything is combined. If you’d like a runnier sauce add in a tablespoon or two of the pasta water.
Split the pasta between two bowls and top with the remaining basil leaves and a drizzle of olive oil before serving.
