Cranberry + 'Bacon' Swirls

This recipe is super simple as it is made with only 5 ingredients and uses ready rolled puff pastry. The perfect nibble to whip over the festive season. You could also use any other flavour of cheese to mix it up!
Ingredients

1 packet ready rolled puff pastry

1 block Cranberry cheese

3-4 tbsp cranberry sauce

1 packet vegan bacon pieces

Soy milk to glaze
Directions
Pre-heat your oven to 180°c and line a baking tray.
Unroll the sheet of puff pastry and spread the cranberry sauce over the surface.
Cut the cranberry cheese into small cubes and dot all over the pastry.
Sprinkle over the bacon pieces.
Carefully roll up the pastry as tight as you can, rolling longways into a sausage and tucking the cheese and bacon in as you go. It will look quite lumpy - this is fine!
Starting at one end with a sharp knife, slice out circles of pastry approx 2cm thick and place on your baking sheet face down to reveal the swirls. Continue until you've used up all the pastry.
Brush with soy milk and place in the oven for 15-20 minutes, until puffed up and golden.
Recipe Note
These swirls can also be made in advance and heated up again in a hot oven for 3-4 mins.
