Cheese, Chilli + Herb Savoury Pancake 🌱

You can rustle this up in 15 mins or less so it's a super speedy option for lunch, dinner or a snack. The quantities below make one pancake, so double or triple the ingredients as needed depending on how many pancakes you'd like.
Ingredients

30g Gram flour (chickpea flour)

35ml Water

1/4 tsp Baking powder

Big pinch of salt

Pinch of chilli flakes

1/2 tbsp Olive oil, for cooking

Sour Creme + Chive Spread
-
Small bunch of coriander leaves

Crispy chilli Oil
For the pancake:
To assemble:
Directions
To make the pancake add all the ingredients to a small bowl and whisk until combined.
Heat the oil in a small frying pan on a medium heat. Once the oil is hot add in the pancake batter, swirling the pan so that it covers the base.
Cook for 5 minutes on each side, until golden brown.
To serve dollop teaspoons of Sour Creme + Chive Spread on the pancake and top with the coriander leaves and a generous drizzle of chilli oil.
Recipe Note
If you're a coriander hater, never fear - you can use any other soft herb instead (basil, dill, parsley) and if you don't like chilli then simply leave it out and top your pancake with a good squeeze of lemon juice instead.
