Smoked Cheese + Bacon Pancakes

I've used Smoked cheese but you could easily substitute for one of our other block cheeses. Freezing the cheese while you make the pancakes helps you to grate it without it being too soft.

Ingredients

60g Smoked cheese
-
100g plain flour
-
pinch of salt
-
250ml milk (I used soy)

Oil for cooking

1/2 packet vegan bacon
-
4 Spring onions
Directions
Place the block of Smoked cheese into your freezer while you prep the other ingredients
Whisk together the flour, milk, and salt to create a smooth batter, set to one side to rest for 5 minutes
Slice the bacon into small pieces, add to a frying pan and cook as per packet instructions until crispy. Put into a small bowl
While the bacon is cooking wash and finely slice the spring onions
Now make the pancakes. Place the frying pan back onto a medium high heat and add a little oil. Pour around ½ cup of batter into the pan and cook on each side until golden and brown
Repeat with the remaining batter, greasing the pan in-between, until all of the batter is used up
To build your pancakes: Lay out a single pancake and top with a small handful of bacon and spring onions, then take the block of cheese out of the freezer and grate over a layer of cheese. Fold up into quarters to make a triangle.
Repeat with remaining pancakes until they’re all filled. Eat immediately and enjoy!
